Indian French toast

Quick and easy to make, I would go as far as saying Indian French toast aka Indian eggy bread is quite a universal dish. You can eat it anytime, breakfast, lunch, dinner or as a snack. The balance of eggs, bread and spice is perfect. Just the name Indian eggy bread makes my mouth water. It's helped me through some very hard times such as unexpected lunch guests, lazy Sunday brunches, and the hardest of times the dreaded hang over. I've eaten variations of eggy bread all my life, even my family in rural India love this dish. Obviously every Indian has their version and as humble as all Indian's are their recipe is always better. I disagree, my recipe is (Yes i'm a humble Indian too). Directions

1Crack your eggs into a mixing bowl, add the milk and whisk lightly.

2Add the ginger, chilies, salt, garam masala, cumin powder, coriander powder to the eggs and whisk until all the ingredients are mixed well.

3Add one tablespoon of oil to a large frying pan and heat on a medium heat. I have to fry it in 4 batches in my frying pan.

4Dip each slice of bread in the egg mixture. Dip the bread right to the bottom and take it out quickly, you don't want the bread to soak but to be coated in the eggy deliciousness. Then put the bread into the frying pan. Only dip the slices of bread, which will be cooked in that batch.

5Cook the bread for 1 minute and 30 seconds and then flip and cook the other side for the same time.

6Repeat the last three stages until you have cooked all the slices of bread.

7Garnish with chopped coriander and serve with an optional big dollop of ketchup.

10 Slices of bread

5 Large eggs

250 ml Milk

1 tbsp Ginger paste

2 Green chilies- finely chopped

1 tsp Salt

1 tsp Garam masala

1/2 tsp Cumin powder

1/2 tsp Coriander powder

4 tbsp Sunflower oil

1 tbsp Chopped coriander for garnishing
