Indian omelette sandwich (amazing breakfast, brunch, lunch or snack)

An Indian omelette sandwich is something I grew up with. It takes me back to my childhood and I wanted to share this recipe with you. We would have Indian omelette sandwiches on weekends, or when mum couldn’t be bothered cooking an extravagant meal.
A omelette is a personal preference of textures and flavours we put in addition to the basic omelette. I rather disapprove of the word basic when it comes to my omelette as it is anything but basic, i would consider it to be more of a foundation omelette and you can add what you like such as cheese, ham, tomatoes, peppers to name a few.

Directions

1Crack the the eggs into a mixing bowl and whisk to combine both the egg white and yolk. You should whisk until you start seeing small air bubbles forming.

2Add the onion, green chilli, salt, garam masala and whisk again to combine.

3In an omelette pan add the oil and heat on a medium heat.

4Add the omelette mixture into the pan, move it around quickly so it spread evenly and before the egg starts to set.

5Cook for around 1 minute and the egg mixture should set nicely. Shake the pan slightly to free it from the edges and with the aid of a spatula flip the egg over to cook the other side.

6After another minute, fold the egg and remove onto a plate. Cut the egg in half and place on two pieces of toast.

7Add a good dollop of Heniz ketchup and top with another slice of toast making this delicious omelette sandwich. Enjoy with a mug of hot masala chai.

Ingredients

3 Large, free range eggs

1/2 Red onion, finely chopped

1 Green chilli, finely chopped

1/4 tsp Salt

1/4 tsp Garam masala

2 tsp Rapeseed oil

4 Slices of toast
