Karahi chicken

A Karahi is a indian pan which is very similar to the Chinese wok. Karahi dishes are also know as ‘Kadhi’ in Northern India.
My recipe is my grandma’s recipe which i’ve adapted a little and in my opinion i think my grandma would have preferred mine to hers.
Many Karahi recipes put all the ingredients together but my Karahi is staged which gives more depth to all the flavours as they all combine together making this recipe truly irresistible.

  • Cook: 1 hr

Directions

1Heat the sunflower oil in a wok or karahi on a medium to high flame, add the cumin seeds as soon you smell the cumin seeds aroma add the onions and cook until they are golden brown.

2Add the salt, coriander stalks, ginger, garlic and cook for a few minutes, constantly stirring so the ingredients don’t stick and burn to the pan

3Reduce the heat then add the turmeric, cumin powder, coriander powder, green chillies stir for a couple of minutes and add the tinned tomatoes and increase the heat.

4When the oil has come to the surface in the pan add half the water and reduce again to this stage then repeat with the remaining water

5Once the masala has reduced again add the chicken and mix throughly. Reduce the heat to medium and cook for 20-25 minutes until the chicken has cooked and stir occasionally.

6Add the chopped tomatoes, green peppers, garam masala, and chopped coriander leaves and mix throughly. Serve with fresh tandoori chapatis and minted raita.

TOP TIP

When adding powder spices when cooking always reduce the heat in the pan for a short while. This will help the spices release their flavours rather than burning and giving a bitter flavour to the curry.

Ingredients

1 kg diced chicken breast

2 tbsp sunflower oil

1 tbsp cumin seeds

3 large onions finely chopped

5 cloves of garlic crushed

2 tbsp grated ginger

4 green chillies finely chopped

1 tin of chopped tomatoes

1 bunch of coriander chopped (Stalks and leaves but keep them separate)

1 tsp turmeric

1 tsp cumin powder

1 1/2 tsp coriander powder

1 tsp garam masala

1 1/2 tsp salt

2 tins full of water (use the empty tin of chopped tomatoes)

1 tomato chopped into large pieces

1 green pepper diced into large pieces
