What a lovely dish this was, fragrant, rich in flavour but never too heavy, and never too spicy. My first thoughts were to partner it with a similarly proportioned wine. And I think if I’d followed that path to places such as Germany or Alsace, I wouldn’t have been disappointed. However, my second thought was that I might as well try the portion that Sukhi had provided with the selection of wines that was already open on my kitchen counter.
Bingo. And bingo in the form of the Godello grape that thrives in Galicia in Northwest Spain. Good in its youth but capable of age, and not averse to a splash of oak, Godello is a variety that merits serious attention from all wine lovers – look for wines from Valdeorras and Monterrei. For the Karahi Fish, avoid the bigger, older, oakier wines in favour of the brisk, crisp younger versions – you won’t be disappointed.
