Masala corn chaat

Masala corn chaat is a quick easy recipe when you're feeling peckish, a snack or giving your mouth an explosion of flavour. I first tried masala corn chaat whilst on holiday in India, the crunch of peanuts, the sourness of the lime and mango powder, the heat from the chilli and the sweetness of the sweetcorn sends your tastebuds on a journey you'll want time after time. My recipe for masala corn is quite simple and easy but packed full of flavour. You must try this!!

Directions

1Melt the butter in a sauté pan over a medium heat

2Add the cumin seeds and cook until you start smelling the pleasant aroma of cumin (45 seconds)

3Add the ginger, garlic and green chilli and stir for 1 minute

4Add the cumin powder, mango powder, coriander powder, salt, turmeric, garam masala, pink Himalayan salt and stir for 1 minute

5Add the sweetcorn and mix throughly coat all the kernels of corn with the buttery deliciousness. Once its completely amalgamated with the spices empty it all into a large mixing bowl and let it cool for 5 minutes.

6Once cooled add the chopped coriander, chopped mint, diced red onion, juice of the lime and mix everything together

7Add the peanuts at the end just before serving and mix them throughout the sweetcorn. Doing this will allow the peanuts to remain crunchy and add another texture to the chaat.

Ingredients

40 g Butter

560 g Tinned sweetcorn

2 tsp Cumin seeds

1 tbsp Minced ginger and garlic

1 Green chilli finely chopped

3 tbsp Chopped coriander

2 tbsp Chopped fresh mint

1 Red onion finely diced

1/2 tsp Cumin powder

1/2 tsp Coriander powder

1/2 tsp Mango powder

1 tsp Garam masala

1/2 tsp Himalayan pink salt

1/2 tsp Turmeric

1/4 tsp Salt

50 g Dry roasted peanuts

1 Lime
